THE BIG DADDY STORY

“Country” Joe Banning grew up in East Tennessee, home to arguably some of the worlds best bbq. The smoke and the flavor is what lured Joe to smoked meats, specifically pulled pork and pork ribs. After long career in the home building business, Country Joe retired and decided it was time to try his hand at making his own meats and focused on what he knew and loved most…Memphis Style BBQ.

As Joe will tell you, “Memphis style BBQ means a lot of things but over the years pork has become the go to barbecue meat for Memphis style BBQ.”

Other than the predominant use of pork, the other elements that highlight this regional style are the rubs. Traditionally, the meat is rubbed down with a dry rub made up of up to 40 different spices! However, all respectable Memphis style rubs will feature paprika and garlic.

This BBQ style’s signature dish is pulled pork or pork ribs with coleslaw, cornbread, baked beans, greens, mac and cheese and/or cornbread, all mouthwatering and delicious combos!
